At one point Dunlop writes a description of the texture of chicken testicles so alluring, so enticing, that I missed my stop on the train home.

I truly feel invited to a banquet, the veil is lifted, I even understand the sense of why people historically ate so much shark fin. I am so excited to eat Chinese food and I have never read someone write with so much detail and passion about food.
